15g chopped basil, fresh
2 tbsp flour
3 slices stale bread pepper, freshly ground.
1 tbsp chives, chopped
Preheat air fryer to 200°C Combine ricotta, flour and egg yolk in a bowl and mix properly.
Add salt and pepper.
Add chives and basil. Mold mixture into 20 little balls.
Leave balls to rest.
Prepare breadcrumbs in a large bowl.
Beat egg white into another.
Coat each ball with egg white in a bowl and toss with breadcrumbs. Place balls in air fryer basket without overlapping and cook for 8 to minutes
