Total time: 25 minutes
8 baby Yukon gold potatoes
1 tsp olive oil
1 1/2 tbsp chopped chives
1/8 tsp kosher salt
2 bacon slices, 2 tbsp reduced fat cream/ cheddar.
Coat potatoes with oil and place in air fryer basket to cook for 25 minutes at 350 F, until fork tender.
Stir occasionally. Still at the same time, cook bacon in pan over medium heat for 7 minutes until crispy.
Remove and crumble with your hand.
Place potatoes on a flat plate and crush lightly till it splits open.
Top with crumbled bacon, drippings, chives, sour cream, cheese and salt. Serve.
