Ricotta and Spinach Filo Pastry

INGREDIENTS

500g baby spinach

1 egg

250g ricotta cheese

4 sheets filo pastry

30g pine nuts and/or 1 lemon zest

INSTRUCTIONS

Steam spinach in microwave or boiling water for 30 seconds.
Drain.
Chop drained spinach and combine with ricotta, lemon zest, egg and nuts. Season to taste.
Divide filo sheets into 3 triangular strips.
Add 1 tbsp of mixture into the large end of each strip.
Fold into a triangle and place in air fryer. Fry at 200° C for 4 minutes.
